Vegan Broccoli Cheddar Soup! Healthy and nutritious with loads of broccoli, cauliflower rice, sweet potatoes and savory spices.

This vegan broccoli cheddar soup is so delicious, healthy, and comforting. It is loaded with broccoli, sweet potatoes and cauliflower. Soup season is beautiful and cozy! Making healthy soups in the Instant Pot will make your busy weekdays so much easier.

Can I make this in the Instant Pot?

Yes! I often throw this is the Instant Pot. Add the sweet potatoes, spices, and broth to the Instant Pot and pressure cook 4 minutes. Release the valve to release the pressure. Blend with an immersion blender until smooth. Add the rest of the ingredients right away and stir to combine. Pressure cook 0 minutes, just enough to warm the vegetables.

Can I freeze this soup?

Yes this is a great soup to freeze and reheat on the stovetop.

Can I sub the coconut milk?

You can use your favorite non dairy milk. The result may be a bit thinner so you could add ½ more sweet potato for a thicker soup.

The combination of coconut milk, sweet potatoes, and nutritional yeast takes the place of dairy cream and makes this recipe creamy and taste cheesy. I hope you enjoy this recipe as much as our family does!

Description

Vegan Broccoli Cheddar Soup! Healthy and nutritious with loads of broccoli, cauliflower rice, sweet potatoes and savory spices. 


Ingredients

  • 4 cups Vegetable broth


  • 4 cups Chopped Broccoli (I use frozen broccoli, thawed first)
  • 4 cups Cauliflower rice
  • 3 Sweet potatoes, peeled & cubed
  • 1 can Coconut milk (Full fat)
  • 2 tablespoons Garlic, minced
  • ¼ cup Nutritional yeast
  • 1 Onion, diced
  • ¼ teaspoon tumeric
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • ⅛ teaspoon Cayenne pepper
  • 1 teaspoon Basil

Instructions



  1. In a large pot add the sweet potatoes, onion, garlic and the vegetable stock and cook on medium heat until the potatoes are tender and you can put a fork through.
  2. Turn off heat and blend with an immersion blender until completely smooth.
  3. Add coconut milk, spices and herbs, broccoli and cauliflower rice. Cook for another 10 minutes until everything is warm. 
  4. Serve warm.

  1. Freezer: In a freezer safe container, store for up to 6 months. 
  2. Instant Pot: add all ingredients and pressure cook for 4 minutes.
