Vegan Sugar Free Brownies are indulgent and guilt free all in the same bite! Made with sweet potatoes, almond butter, and almond flour! Paleo and Vegan!

There are cake-like brownies and there are fudgy brownies. These Vegan Sugar Free Fudge Brownies are decadent and fudgy, almost like mousse even! I have been sugar free for 6 weeks now and it has been really interesting to see the how my sweet tooth has almost diminished. I still have chocolate cravings from time to time, so I came up with this recipe to satisfy that sweet tooth. One thing I found was that if I have healthy alternatives on hand to satisfy that indulgent craving, I can stay on course, but simply trying to ignore my craving is never a good idea!

I love that I am not left craving more sugar after eating these brownies. They will satisfy your sweet tooth without the drug inducing sugar cravings! These brownies are very simple and quick to make. You start by cooking the sweet potato and throwing a few ingredients in to a blender. Then transferring to a bowl and adding the rest of the ingredients. The reason for the blender is to get the sweet potato soft and fluffy. You could also use a hand immersion blender and mix right in the bowl as well if you don’t have a blender.

These are ingredients I always have on hand, so luckily, I can whip these up whenever the mood strikes. If any of these ingredients are new to you or you’re not in the habit of keeping in the pantry, I recommend you start. The combination of tapioca, almond, and tiger nut flours in baked goods are incredible. I can achieve a delicious texture without feeling the way that traditional flour or even gluten free flours make me feel.

What you need to make these:

  • Organic sweet potato
  • Creamy almond butter (the kind with oil on top)
  • Cacao powder
  • Swerve granular sweetener
  • Almond flour or Tiger Nut Flour
  • Tapioca flour
  • Baking powder
  • Flax meal
  • Apple cider vinegar
  • Vanilla extract, the best you can find
  • Sea salt
Can I freeze these?

Yes, wrap them well.

Can I use another kind of nut butter?

Yes, I used almond butter which has oil in it. If you sub another nut butter with less oil. I recommend adding ½ Tablespoon avocado or coconut oil, so these brownies still turn out fudgy.

Ingredients

  • 1 cup sweet potato, cooked
  • ½ creamy almond butter
  • ½ cacao powder
  • ¼ cup swerve granular sweetener
  • ¼ cup almond flour or tiger nut flour
  • ¼ cup tapioca flour
  • 1 teaspoon baking powder
  • 1 flax egg (1 Tablespoon flax meal and 3 Tablespoons water, let sit for 5 minutes)
  • 1 teaspoon apple cider vinegar
  • ½ Tablespoon vanilla extract
  • ¼ teaspoon salt

Instructions



  • Preheat oven to 350 degrees.
  • In a blender add the sweet potato, almond butter, and flax egg. Blend until smooth. Transfer to a medium bowl.
  • Add the rest of the ingredients and stir until well incorporated.
  • Transfer to a greased 8×8 greased pan.
  • Bake 350 for 10 minutes.

Notes

If you want to freeze these brownies, they will cut easier if set in the fridge for a while. Wrap them well and they will be good for up to 4 months.
