Vegan Sourdough Banana Pacakes! Is there anything better!?!?
When I first learned about how to make sourdough starter, I was so uncomfortable with all the discarding and waste! I kept researching and found that you can add your discard to so many things! I love the taste of sourdough and the benefits it brings to gut health that I started experimenting to transform my current recipes into sourdough using my discard. Now each day when I feed my starter, I have a glass jar with a lid that I keep in the fridge. I simply add my discard to the jar each day and place in back into the refrigerator until I am ready to use it. I love how simple using the discard is and it even makes many recipes itself that much simpler.
My two oldest children love to cook and bake and about once or twice a week they will make breakfast all on their own in the morning. This is an easy recipe that they can prep themselves and then they just need me to help with the stove, although they are on their way to doing that part all on their own as well.
The combination of the banana and the sourdough is magic! These Vegan Sourdough Banana Pacakes are sweet and sour yet a little savory and bursting with flavor. This are truly perfect all on their own without any toppings. My kids love to add a little nut butter and fruit though because it makes it more fun for them.

- With a fork smash up your banana.
- In a medium bowl add sourdough starter and milk and mix until incorporated.
- Add the rest of the ingredients and let sit 5 minutes.
- Heat skillet to medium high heat and grease with vegan butter or coconut oil. Pour patter to form medium pancake.
- Once the pancake is covered with tiny bubbles it is ready to flip.
- Repeat until all the batter is gone.
- Top with maple syrup, almond butter, or fruit.
