Easy and elegant Shaved Brussels Sprout Salad served with an Simple Citrus Vinaigrette! Simple and Healthy!

This is a very quick salad and since the romaine lettuce and brussels sprouts are crispy you can make this in advance and even put the dressing (I used my Simple Citrus Vinaigrette) on and it won’t wilt the way kale or spinach salad will. I love to make a big batch of this and eat it all week long for lunch. This salad is perfect for a summer party or in the winter to boost your vitamin-c intake, its really good all year round!

If you have a food processor this is the easiest way to slice you brussels sprouts. Just use the slicing disk attachment. Add the whole brussels sprouts into the feed and push through using the tube pusher. My kids love to help with this step and anytime they are helping to make something they are much more likely to eat it!

What if I don’t have a food processor?

That’s ok! It will just take a little longer to slice your brussels sprouts, romaine lettuce and carrots by hand. Slice as thin as you can with a sharp knife. Alternately, you can also use a mandolin slicer.

Can I make this in advance?

Yes! This is a great recipe to make ahead. Just keep your dressing separate in a airtight container until you are ready to serve.

Is it safe to eat brussels sprouts raw?

Yes! Super healthy but shaving them in a food processor does make them much easier to chew!

What if I don’t have the exact ingredients?

No problem! Feel free to swap out for different dried fruit, nuts or seeds, even swapping for spinach, kale or green beans for instance.

Description

Easy and elegant Shaved Brussels Sprout Salad served with an Easy Citrus Vinaigrette! Simple and Healthy!


Ingredients

Units Scale



  • 5 cups shaved brussels sprouts
  • 2 cups chopped romaine lettuce
  • ¾ cups shredded carrots
  • ½ cup pine nuts
  • ½ cup dried apricots, chopped
  • ¾ cups Simple Citrus Vinaigrette
  • Salt/pepper to taste

Instructions



  • In a food processor using the slicing disk attachment, slice the brussels sprouts and add to a large bowl.
  • Switch the slicing disk to the shredded disk on your food processor and shred your carrots, add to your large bowl.
  • Add the chopped romaine lettuce, pine nuts, chopped apricots, salt and pepper to taste. Mix with a large salad spoon and fork.
  • Serve with Simple Citrus Vinaigrette.

  1. This salad will keep in the refrigerator covered for 1 week.
  2. If you do not have a Food Processor, a Mandoline will work fine as well.
