Super quick and healthy Pear and Pistachio Spring Salad with dried pears and pistachios with a simple dressing!

This Pear and Pistachio Spring Salad is not only delicious but it’s going to make you feel great. Every spring and fall I feel I need to do a little detox or reset. I usually drink tons of smoothies, but back on carbs and sugar and eat plenty of veggies! With seasonal allergies, seasons changing and more bugs going around all make it very important to boost your immune system. I also find I don’t have as much time to cook as I do in the winter. In Spring I’m doing more projects and wanting to get outside more. I need recipes that are no fuss and super healthy. Its especially important that I feel fueled to run around with my kids and accomplish all my spring cleaning projects.

We took the kids hiking over the weekend before the rain hit. I made this salad on a whim with what I had in the fridge. I was so thrilled with how it turned out. It came together in about 5 minutes. You can prep the dressing and salad mix ahead for the week. Leacing off the avocado until your ready to eat unless you don’t mind slightly brown avocado. I even add the dressing and love that it won’t wilt like many salads. I packed this salad for me and David. I made sandwiches for the kids but my girls kept asking for more bites of this salad! This always makes me happy, I was delighted with how well they liked the crunchy super blended mix. It is loaded with raw brussels sprouts, carrots, and broccoli.

Other fruit and nut combos:

You can mix and match different raw nuts and dried fruit or use whatever you have.

  • Dried cherries and almonds
  • Walnuts and mango
  • Cashews and dates
  • Pecans and cranberries

If you are trying to avoid sugar the pears are lower in sugar that other dried fruit. Also, you can always leave the honey out and add a little more lemon and olive oil as needed. Keep this salad simple and go outside and enjoy the beautiful or rainy weather. We are currenlty having lots of rain but I am enjoying it!I really love rainy days, I feel that its a wonderful invitation to start a new project, or book! I just love enjoying all the seasons and fueling my body as needed in whatever season I am in.

Description

Super quick and healthy spring salad with dried pears and pistachios topped with a light dressing of honey, lemon, and olive oil.


Ingredients

Units Scale

For the Salad



  • 10–ounce bag super blend salad mix (mix of brussels sprouts, carrots, broccoli, cabbage)
  • 3 dried organic pears
  • ¼ cup raw pistachios
  • 1 avocado, diced

Dressing

  • ½ juice of a lemon
  • ½ Tablespoon honey
  • ½ Tablespoon olive oil

Instructions



  • In a medium bowl add the salad mix.
  • Chop the pistachios and pears and add to the salad along with the avocado.
  • In a small dish juice ½ lemon. Add honey and olive oil and whist with a fork.
  • Add dressing to the salad and toss well until well coated.
  • Salt/pepper as desired.
