It’s so delicious and simple, yet it feels so put together and elegant. I have to say I was a little surprised how much my kids like this quiche because they love to tell me they don’t like sweet potatoes. However, I keep sneaking it into meals like lasagnas, soup, and pancakes. The response is usually I love it, but I don’t like sweet potatoes…I know you moms out there can relate to this!
So, when I made this sweet potato crusted quiche I was enthusiastic (but not overly obvious) about the fact that I used a sweet potato for a crust instead of the traditional dough version. I even got them to help me chop, slice and dice. I’ve noticed that when I can let them help me make super healthy meals they are far less picky and always seem to enjoy the food better.
Of course, swap out any meats or make it meatless with just vegetables. You can follow the basic guides of how much sausage and broccoli there are and swap for other things. I would recommend keeping the cauliflower rice because it adds a thickness and texture that helps along with the dairy free cream to mimic a dairy cheese.

Ingredients
- 4 eggs
- ½ pound sausage
- 1 sweet potato
- 1 cup broccoli florets, fresh or frozen
- ½ cup cauliflower rice
- 3 ounces cooked sausage
- ¼ cup green onion
- ½ cup coconut milk
- ½ cup mayonnaise
- ¼ cup nutritional yeast
- 3 cloves garlic, minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 350 degrees.
- Cook sausage in skillet and drain excess fat. Transfer to a bowl.
- Grease a pie pan.
- Peel your sweet potato and slice very thin. Line the pie pan with the sweet potato to make a crust.
- In a medium bowl add eggs, coconut milk, mayonnaise, nutritional yeast, minced garlic, salt and pepper. Whisk until well combined.
- Add cooked sausage, chopped broccoli, cauliflower rice, and green onions to the eggs and cream mixture. Stir until well combined.
- Pour over sweet potato lined pie pan.
- Bake for 40-45 minutes. Check your quiche with a butter knife to ensure the middle is done.
- Let cool 10 minutes before slicing.
