It’s my son’s 8th birthday and of course he wanted batman cupcakes with his friends! However, on his actual birthday we do our own celebration and spend the day with just our family, he requested this French Silk Pie and my Vegan Healthy Pecan Pie. I loved that he requested these desserts over something overly sugary. Really, I think that since we don’t do a lot of sugar in our home their taste buds are more refined. I believe in celebrating food and life. However, that doesn’t mean we need to become unhealthy and sick in the process, right? What I am trying to do instead, for my family, is to set them up to like the healthier versions of dishes. This way the healthier versions are the things they want. Rather, than growing up and having to eliminate their favorite dishes or treats.
There are three components to this recipe; the crust, filling and coconut whipped cream topping but don’t let that intimidate you. This recipe is very simple and quick to assemble. It’s the perfect dinner party recipe! You can make this ahead and is sure to please everyone especially around the holiday season.
Even though this is a descendant treat, it is surprisingly light and not overly sweet or rich. The crust is light and flaky. If your oven runs hot, try going for 5 minutes to begin with. I like a crust underdone for this recipe if anything so that it isn’t dry and crumbly. The minute you see a light golden color take it out of the oven.

Ingredients
- 1 cup almond flour
- 2 Tbs coconut flour
- ⅔ tapioca flour
- ½ palm shortening
- 2 Tbs coconut sugar
- ½ tsp salt
- 1 egg
Chocolate Filling
- 1 can full fat coconut milk
- ¼ cup coconut sugar
- ¼ cup + 1 tablespoon monk fruit powder
- 1 ¼ cup dairy free semi-sweet chocolate chips (I use enjoy life)
- ¼ cup + 1 tablespoon cocoa powder
- ⅛ teaspoon sea salt
- 1 teaspoon vanilla
Coconut Whipped Cream
- 1 can of full fat coconut cream
Instructions
- Preheat oven to 350
- Mix everything together with a fork or your hands until crumbly. Add the egg and mix well until it comes together in a ball.
- With your hands, press into a greased pie pan. Using your fork pierce the dough all over, then bake crust for 6 minutes.
- Let the crust cool completely before adding the filling.
Chocolate Filling
- In a medium saucepan, combine all the ingredients for the chocolate filling.
- Whisking until the chocolate chips are melted and there are no clumps from cocoa powder.
- Stir for 5 minutes until mixture thickens. Remove from heat.
- When the pie crust is cooled you can pour into the pie crust. Place pie in the refrigerator until it is firm to a light touch.
- Top with coconut whipped cream and chocolate shavings.
Coconut Whipped Cream Topping
- 1 can full fat coconut cream
- Place the can in the refrigerator overnight
- Take out only the white cream part and use the liquid for a smoothie another day.
- Simply place the white cream into a bowl and whip with a fork until smooth.
