These Paleo Chocolate Chip Cookies are my new favorite recipes. Who doesn’t love chocolate chip cookies?? I mean come on…..I love love love chocolate chip cookies. I really feel it is one of the best things on this planet. However, a typical chocolate chip cookie is loaded with sugar.
Ever since I had my first child, I had this intense desire to be the mom who makes the BEST chocolate chip cookies. I do believe I have accomplished this, however, they are loaded with sugar. Now, my desire is to be the mom who makes delicious but healthier chocolate chip cookies.
This recipe was inspired by my children’s friend Eileen. She’s an amazing little girl who has type 1 diabetes. As moms I think we all want our children to have the BEST memories of childhood. A big part of that are the fun treats we get to have without worrying about our waistline right!?!?
I strive to make all the childhood goodies healthier, so that I can feel better about giving my own children and my friends children delicious treats, ideally that they have no idea are “healthier”! This way, when they go out in the real world and taste all the added sugar, my goal is that their taste buds and bodies will not like it. Because they have grown to learn to taste REAL food.
What you need to make the best Paleo Chocolate Chip Cookies:
- Egg: room temp is important!
- Swerve or monk fruit: whichever you prefer
- Coconut oil: I use this for a good fat source, you could use butter or ghee if not dairy free
- Vanilla: must for all baking
- Almond flour: love the texture from almond flour and added fat and protein!
- Baking soda: helps cookies to rise
- Salt: best to use sea salt or Himalayan salt
- Blackstrap molasses: a little goes a long way, this is in place of brown sugar
- Cinnamon: a little spice adds depth
- Nut butter of choice: my favorite is cashew or almond butter
- Sugar free chocolate chips: (I used Pascha Sugar Free Chocolate Chips)
Yes! I place this in a airtight container with parchment between each layer of cookies.
Paleo Chocolate Chip Cookies
Ingredients
- 1 room temperature egg
- ½ cup Swerve Granular Sweetener or Monk Fruit sweetener
- ½ cup coconut oil
- 2 teaspoon vanilla
- 1 ½ cups almond flour
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- 1 teaspoon blackstrap molasses
- ½ teaspoon cinnamon
- 3 Tablespoons nut butter of choice
- ⅓ cup sugar free chocolate chips (Pascha Sugar Free Chocolate Chips)
Instructions
- Preheat oven to 325 degrees.
- In a medium bowl beat the Swerve Granular Sweetener or monk fruit sweetener and coconut oil with a whisk until soft.
- Add egg, vanilla, nut butter, and molasses and beat until well combined.
- In a separate bowl, mix almond flour, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet ingredient and mix until well combined.
- With a spatula mix in the chocolate chips.
- Bake for 8-10 minutes, depending on oven.
- Let cool completely. These will be soft until cooled. Transfer to a wire rack.
