Paleo Chocolate Almond Butter Woopie Pies will make you swoon! The perfect celebratory treat for birthdays, holidays, or heck a Tuesday morning with coffee! Am I right!?
These woopie pies are sweetened with maple syrup and swerve sweetener. Maple syrup has many health benefits and is much better for you than white sugar. I used Brown Swerve in this recipe as well, but you can also use Brown Monk Fruit or even coconut sugar. Swerve and Monk fruit are non-glycemic and zero calories while coconut sugar is low-glycemic but has the same calories as sugar. I love all these alternatives to sugar it really depends on my purpose and what my body needs that given day.
For example, if I have been good at staying away from sugar that week, I will have no problem using coconut sugar but if I have been splurging a little too much, I will use Swerve or monk fruit and still satisfy my sweet tooth without satisfying flavor.
What is Swerve?
Swerve is a sugar alternative that can measure cup for cup in a recipe. It is zero calorie and non-glycemic. It won’t raise your blood glucose or insulin levels making it a great alternative in desserts.
You can sub the almond flour for Tiger Nut flour and the almond butter with cashew butter. Tiger Nut Flour is very similar in texture and taste to almond flour. Using cashew butter in place of almond butter will give these cookies a slightly different texture since the cashew butter is less oily. When I replaced both the Tiger nut Flour and cashew butter in place of the almonds the result was a cakier cookie. I made these versions side by side and my house was split 50/50 for who liked which version better.
Yes! I love to make a large batch and freeze these for when my sweet tooth is calling. Simply place them in a freezer safe container for up to 4 months.

Ingredients
- ½ cup coconut oil, softened but not melted
- ½ cup almond butter or Artisana raw cashew butter
- ¼ cup Tablespoons maple syrup
- ¼ cup Tablespoons brown swerve or monk fruit
- 2 Tablespoon vanilla extract
- 2 flax eggs (2 Tbsp ground flaxseed + 6 Tablespoons water, let sit for 5 minutes)
- 1 ½ cups almond flour or Tiger Nut Flour
- ½ cup tapioca flour
- 6 Tablespoons coconut flour
- ¼ cup + 1Tablespoons cocoa
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- ½ teaspoon salt
Almond Butter Frosting
- 1 cup palm shortening
- 1 cup almond butter
- ¾ cup Confections Powdered Swerve Sweetener
- 2 Tablespoon honey
- ½ tsp vanilla
- Sprinkle of sea salt
Instructions
- Preheat oven to 350 degrees.
- Make the flax eggs.
- In a medium bowl mix all wet ingredients with a handheld mixer. Add in flax eggs.
- Add in the dry ingredients and mix until well combined.
- Scoop 2-inch scoops of dough onto a parchment lined cookie sheet.
- Bake 350 for 10-12 minutes.
- Let cool completely and fill with almond butter frosting.
To make Almond Butter Frosting:
- Place all ingredients in a medium bowl. Mix well using a hand mixer until light and fluffy.
- Fill cookies liberally and enjoy!
