This Leprechaun Nice Cream is simply made with coconut cream, bananas, spirulina, and spinach—free of food coloring and unhealthy ingredients! It’s vegan, paleo and keto-friendly.
Leprechaun Nice Cream has been our family’s tradition for the last few years on St. Patrick’s Day. It’s delicious, light and refreshing after our Irish Soda Bread, roasted potatoes, and Reuben sandwiches! We love celebrating St. Patrick’s Day, both my husband and my family have over 50% Irish in our lineage. We start listening to Celtic music and sing Irish folk songs all through March.
Growing up my mom would make us banana ice cream or “nice cream” all the time. She was a “health nut” and I don’t think we even knew about the version of ice cream until around age 9. My mom would actually make the banana ice cream in her juicer which created a beautiful soft serve look and consistency! But it was a bigger clean up than I like so I started making it in the blender and the nice thing is you can add all different flavors right into the blender to create various versions of nice cream.
Simple bananas and a little almond milk in a blender is delicious all on its own but I found adding a little nut butter makes it even creamier!
I created Leprechaun Nice Cream by accident when thinking of ways that I could get my picky eater to take in more veggies when he wasn’t drinking his green smoothie. And then since its green why not add peppermint!!
Other favorite flavor variations of Nice cream (2 frozen bananas ):
- Chocolate (2 Tablespoons cocoa powder)
- Raspberry (¼ cup raspberries, frozen)
- Strawberry (¼ cup strawberries, frozen)
- Vanilla (add 1 tsp vanilla)
- Matcha (add 1 tsp matcha)
- Peanut Butter Chocolate (1 tablespoon cocoa, 2 tablespoons nut butter)
Personally, I would always use banana in the mix regardless of your flavor variation so that your result is creamy like ice cream and less like sorbet. But you could create a delicious sorbet for example with only frozen strawberries or peaches and a little dairy free milk.
Vitamix: this is the best option in my opinion. You can do any flavors, both small and large quantities and it gets the ice cream super smooth and thick at the same time.
Food Processor: best 2nd option if you don’t have a Vitamix. You will need to stop and scrape down the sides more often, it will take longer and only small to medium quantities. But still does the trick deliciously!
