Greek salad with tomatoes, cucumbers, spinach, and a delicious Vegan Feta Cheez and topped with a simple dressing!
This Greek Salad with Vegan Feta was a quick weekend salad I made up inspired by the Vegan Feta Cheese I made earlier in the week. I haven’t had dairy cheese in over 10 years, and I honestly don’t miss is at all. There are a few meals I make where I add store bought vegan cheese. There are a lot of great options for dairy alternatives out there which is wonderful. However, I have never found a Vegan Feta that is good. Alos, I hesitate to do too much processed alternatives. I prefer to rely mostly on real whole foods to nourish and fuel my body. I was so excited when I accidentally made my vegan feta on a whim, because not only does it taste great, but it is packed full of nutrients.
Now, let’s get into the details of this salad. Simple ingredients that you can find easy any time of year. I didn’t have kalamata olives when I made this, but they would be a delicious addition.
The dressing is a simple honey Dijon that I added to a jar and shook up. It was good I made more for the week ahead.
What you need to make this salad:
Salad
- Spinach
- Serving of Vegan Feta Cheez
- Cherry Tomatoes
- Cucumber
- Red Onion
- Raw Pumpkin Seeds
Dressing
- Raw Honey
- Garlic
- Dijon Mustard
- Lemon
- Olive Oil
If you have young children, I suggest cutting up this salad and with scissors, so it is more of a chopped salad for them. This is my 5-year daughters’ favorite salad, she loved the dressing and feta.

Ingredients
- 3 cups spinach
- 1 ½ cups of vegan feta cheez
- 1 cup cherry tomatoes
- 1 cucumber
- ¼ of a red onion
- ¼ cup pumpkin seeds
Dressing
- 1 Tablespoon honey
- 2 gloves garlic, minced
- 1 Tablespoon Dijon mustard
- Juice of ½ lemon
- 2 Tablespoons olive oil
Instructions
- In a large bowl add spinach and pumpkin seeds.
- Slice Cherry tomatoes and add to the bowl.
- Peel and chop cucumbers and thinly slice red onion and add to the salad mix.
- Top with Vegan Feta cheesz.
Make the dressing
- In a small bowl add all the ingredients and whisk to combine.
- Add to the salad and mix well until dressing is well coated.
