This Cauliflower Hummus has become my new favorite weekly lunch. It is very filling and loaded with nutrients and good fats. I serve it with kalamata olives, cucumber, carrots, and roasted brussels sprouts. Now that is it summer, we are out of the house a lot more. Prepping this on the weekend makes lunches so much easier. I have been eating this recipe almost every day for lunch. I simply switch what I’m serving it with, so that I don’t get bored. This recipe would make a great summer dish to bring to a cookout.
My family eats hummus almost every day. Now that I am trying to avoid all beans and legumes, I needed to find an alternative hummus. Roasted cauliflower makes the texture very similar to hummus. My kids couldn’t tell the difference and my husband now prefers this Cauliflower Hummus to the original. He likes how light and flavorful it is.

- Turn on oven to 400 degrees.
- Clean and separate cauliflower florets and lay on a baking sheet.
- Add minced garlic and toss.
- Drizzle with avocado oil and bake for 20 minutes.
- Remove from oven and let cool.
- Transfer to a food processor.
- Add lemon juice, tahini, olive oil, and cumin.
- Blend until smooth.
- Transfer to a bowl and drizzle olive oil and top with 1-2 teaspoons sumac.
