Comforting Vegan Sloppy Joes, healthier than the traditional version but just as delicious!

Did you grown up eating sloppy joes like I did? It was one of my favorite meals as a kid. I wanted to create a recipe that would be healthier and vegan. I’m really loving the way my body feels on a paleo diet. I served these with my Einkorn Sourdough Hamburger buns for the kids and used Bibb lettuce wraps for me. I’m not a fan of making separate meals for myself and the kids, so this was a great solution.

This recipe is simple and strait forward. You could probably easily make it in an Instant Pot as well, but I haven’t tried this yet.

In the morning I prepped all the ingredients before we started our homeschool day. The weather has been beautiful here, so we went to the beach to build sandcastles and of course they went into the freezing lake with the dog. I knew we would be getting back right before dinner so having everything prepped was perfect. This recipe comes together in about 30 minutes once prepped so it was ready by the time, they rinsed all the sand off in the shower.

What you need for this recipe:

  • Frozen Cauliflower Rice
  • Sweet Potato
  • Walnuts
  • Onion
  • Garlic
  • Avocado Oil
  • Worcestershire
  • Mustard
  • Coconut Sugar
  • Tomato Sauce
  • Salt
  • Pepper
  • Cayenne (optional if you like a little spice)

Feel free to adjust the spice to your families liking. My older two children are starting to enjoy food with a little spice now and sometimes I will put the hot sauce on the table so that they can begin to experiment.

This is a great recipe to get your kiddos involved in cooking. My 7-year-old can peel the potatoes and I let my 5-year-old help with the sauce and add everything to the pot. Getting kids involved in the healthy things you are making always makes them more invested in their health. As a bonus, I find they often like the meal a lot better too! Less complaints at meal time is always a plus for any mom! Am I right!?!?

Description

Comforting Vegan Sloppy Joe’s, healthier than the traditional version but just as delicious!


Ingredients

Units Scale



  • 4 cups cauliflower rice


  • 1 medium sweet potato
  • 1 cup walnuts, chopped
  • 1 onion
  • 3 cloves garlic
  • 1 Tablespoon avocado oil
  • 1 Tablespoon Worcestershire
  • 1 Tablespoon mustard
  • 2 Tablespoons coconut sugar
  • 1 can tomato sauce
  • ½ cup water
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon cayenne (optional if you like a little spice)

Instructions



  • Peel sweet potato and dice it up into quarter inch pieces.
  • Dice up onion and garlic and sauté in a medium size pot or Dutch oven.
  • Add Sweet potato and sauté with olive oil until with covered lid until the potatoes are tender.
  • Add the rest of the ingredients and stir until well combined. Cover and let cook stirring periodically for 20 minutes.
  • Serve with your favorite bun or lettuce wraps. I used my Einkorn Sourdough Hamburger buns.
