This Vegan Feta Cheez is simply divine! I made this recipe up completely by accident. I was low on groceries but also trying to get as many nutrients into my dinner as possible. Lliterally, I had no fresh vegetables except for salad. I love my salads to have various texture with a little crunch, spice, and sweetness. I started cooking the rice started adding items I had in my pantry that I felt like my body needed at that time. Here are just of few of the benefits in the ingredients:

Superpower ingredients in this Vegan Feta Cheez:

  • Cauliflower rice: loaded with fiber and choline
  • Tahini: highly anti-inflammatory, protects liver and kidney function
  • Lemon juice: aids in digestion, anti- cancer benefits
  • Sumac: highly anti-inflammatory ranking very high on the ORAC chart
  • Nutritional yeast: contains all essential B vitamins
  • Turmeric: contain curcumin and anti-inflammatory properties
  • Oregano: loaded with antioxidants that help prevent cell damage
  • Pink Himalayan salt: contains 80 essential minerals
  • Black Pepper: enhances bioavailability of other herbs and spices

If you’re a parent, you know you sometimes must sneak vegetables into your children’s food by way of muffins, soups, smoothies, etc. I noticed cauliflower rice is an excellent thing to add to various meals without compromising flavor or even texture. This recipe is great to add to sandwiches, burgers, soups, salads, pasta or eat on its own.

I usually make up a batch for our food prep for the week. I can easily add it to various dishes we are having that week. This feta is so versatile and the flavor is so incredible. I was really surprised how cheesy and delicious this was. I used frozen cauliflower rice and let it defrost on the counter. Then place it into a pan and add the rest of the ingredients. Sometimes I will add more turmeric if I want more of the anti-inflammatory benefits. However, this does change the taste a bit so I recommend following the directions the first time before making modifications.

Ingredients

  • 4 cups cauliflower rice


  • 3 Tablespoons tahini
  • 1 teaspoon lemon juice
  • 1 Tablespoon sumac
  • ½ Tablespoon nutritional yeast
  • ¼ teaspoon turmeric
  • ½ teaspoon no salt seasoning
  • ½ teaspoon oregano
  • ¼ teaspoon pink Himalayan salt
  • ¼ teaspoon freshly ground black pepper

Instructions



  • In a bowl add tahini, lemon juice, sumac, nutritional yeast, turmeric, oregano, salt and pepper. Mix until well combined
  • In a saucepan add the cauliflower rice and sauce. Stir with a spatula on low heat until well incorporated and warm.
  • Turn off heat and enjoy on salads, pasta, burgers, etc.
